Pan cooking: browning or softening

Pan cooking has different goals. Browning vegetables and softening tortilla potatoes need different settings.

Prepare the workspace

Cut evenly and dry items for browning. Use a wide pan or several batches. Keep a plate for finished vegetables and tools nearby.

Perform the technique

For browning, heat with the specified fat and spread without stacking. Allow contact before stirring. For tortilla potatoes, use moderate heat and check tenderness.

Check the result

Colour and tenderness are separate observations. Check a thick piece. Pancakes need gradual browning, with bubbles on top before turning.

Correct mistakes

Lower heat if the outside colours too fast. If vegetables pool water, use smaller batches and evaporate. More oil cannot fix an overcrowded pan.
