Avoid a soggy apple tart

A golden top does not guarantee a cooked base beneath moist fruit.

Prepare the workspace

Preheat the oven, prepare the tin and slice apples evenly. Do not pour extra juice onto pastry.

Perform the technique

Arrange an even layer without excessive stacking. Follow the recipe and inspect the underside if the tin allows.

Check the result

The centre of the pastry must cook as well as the edges. Cool on a rack; add glaze after baking.

Correct mistakes

Thick wet filling slows the base. Adjust thickness and arrangement first. Blind baking suits other methods but changes the sequence and requires adapting the recipe.
