Blend hummus and adjust texture

Tender chickpeas matter more than extended blending.

Prepare the workspace

Use cooked, drained chickpeas that mash easily. Prepare lemon, tahini, garlic and water. Respect blender capacity.

Perform the technique

Blend the base, adding water gradually. Stop the machine before scraping its sides with a spatula.

Check the result

Check texture before final seasoning: soft, not soupy. Taste before adding lemon and salt.

Correct mistakes

If grainy, check chickpea tenderness first. Lots of water cannot replace proper cooking. Omitting tahini creates a different flavour and texture.
