Chickpeas: from jar to hummus

Cooked chickpeas can remain whole in curry or become a smooth dip. Tenderness makes the difference.

Choosing the product

Distinguish total and drained weights on cans. The packing liquid is not included in drained recipe quantities. Dried chickpeas require separate preparation before blending.

Preparing and using it

Rinse and drain cooked chickpeas. For hummus, check they mash easily before blending. Stir curry gently to retain some whole pieces in the sauce.

Substitutions and adaptations

Cooked white beans make a different dip. Cooked lentils change the curry texture more markedly. Treat substitutions as variants and reassess water and cooking time.

Mistakes to avoid

Do not add dried chickpeas directly to this quick curry. Its timing assumes cooked pulses; follow the packet for soaking and cooking.
